Testing terroir : beyond the controversy between scientists and wine-makers

Abstract

In this paper, however, we would like to analyse more specific points stemming from a situation of “blockage” encountered in the course of a study on the environmental quality of wines regarding the authenticity of a terroir taste in the certification system known as Appellation d’Origine Contrôlée (AOC) (Teil, G. et al, 2007). Indeed, this case is interesting for two reasons: first, because no major controversy between scientists and actors ensued, and this despite a wide range of interpretations; secondly, the solution is unlikely to reside in a reflexive, consulting and/or negotiating authority from which scientists would teach wine-makers to draw the right conclusions from their actions, whilst finding out about the objections raised by actors against any innovation or orientation that scientists deem worthy of support. This particular blockage is therefore not a matter for the kind of mediations mentioned above.
